Gâteaux au chocolat


  • 200 g bitter chocolate
  • 250 g butter
  • 6 eggs
  • 200 g powdered sugar
  • 3 teaspoons of potato starch
  • 150 g almond powder
  • 1 / 2 teaspoon of almond essences
  • 1 spoon of cocoa


Melt butter with chocolate. Mix egg yolks with sugar, whisk until a continuous mass. Add melted chocolate and butter. Put almond powder on a baking sheet and let it make gold in the oven (instead of almond powder can be used finely ground almonds). Mix golden powder with cocoa powder and potato starch, then add the chocolate mass. All build with almond essences and then very carefully add the snow whipped egg whites.
